What is “Certification of Cooking Skills for Japanese Cuisine in Foreign Countries”?
JCDC is the Application / Management Body of the Certification of Cooking Skills for Japanese Cuisine in Foreign Countries based on the Guideline established by the Ministry of Agriculture, Forestry and Fisheries(MAFF).
The Ministry of Agriculture, Forestry and Fisheries has established a Guidelines for the Certification of Cooking Skills for Japanese Cuisine in Foreign Countries in April, 2016.

ガイドラインに定める運用・管理団体です。
農林水産省は、日本食・食文化の海外発信を強化する観点から、平成28年4月1日に、海外における「日本料理の調理技能の認定に関するガイドライン」及び「日本産食材サポーター店の認定に関するガイドライン」を制定しました。
Guidelines
The Ministry of Agriculture, Forestry and Fisheries (MAFF) has revised the Guidelines for the Certification of Japanese Culinary Skills Foreign Countries, which were established in 2016 with the aim of developing foreign Japanese chefs overseas with appropriate knowledge and cooking skills in Japanese cuisine.
-Outline of the Guidelines-
-The Guidelines provide for the certification of foreign cooks who have reached a certain level of knowledge and cooking skills in Japanese cuisine by private bodies.
-Certification of cooking skills is carried out by the certification bodies approved by the application/management body.
-The types of certification are Gold, Silver and Bronze and the knowledge and skills to be acquired are defined for each type of certification.
